Nicole Rogers is the proud owner of Two Scoops Ice Cream & Waffles, a cheerful dessert shop located in the heart of Downtown Salisbury. Since opening its doors, Two Scoops has become a sweet staple in the community, offering locally made hand-scooped ice cream (from Frozen Farmer), specialty Liege waffles, gourmet gifts, and coffee roasted right in Salisbury by Cast 26 Roasters.

With over three years in business, Nicole has created a vibrant space where families, visitors, and dessert lovers of all ages can treat themselves and make memories. “One of the things I love most is being part of the Salisbury community, especially during events like Third Friday,” Nicole says. “There’s something magical about seeing people gather and celebrate over a scoop of ice cream.”

How Did Your Business Get Started?

Nicole’s journey began at Angello’s Unique Gifts, where she served as manager during its move from Market Street to Main Street. It was there that the seeds for Two Scoops were planted. “We introduced ice cream and coffee during that time, and I learned what our community loved,” she recalls. “I began to imagine what more we could offer.”

In October 2021, Nicole took a leap and purchased the shop, transforming it into Two Scoops Ice Cream & Waffles. Backed by her family and a passion for great food and hospitality, she reimagined the space and menu to reflect her vision of a joyful downtown dessert experience. “I love good food and making people happy through food!”

What Are Your Long-Term Goals?

Nicole envisions growing Two Scoops into a destination dessert experience, offering handcrafted desserts, gourmet candy and fudge, and elevated espresso drinks. “I want it to be a place where people come not just for a treat, but for indulgences they can’t find anywhere else locally.”

She also plans to bring production in-house, crafting Liege waffles and select ice cream flavors on site to enhance quality and profit margins—while exploring wholesale opportunities. Long-term, she hopes to make Two Scoops a key player in downtown revitalization through job creation, local partnerships, and even a second location someday.

Nicole’s Advice for Aspiring Entrepreneurs:

“Stay connected to your why,” Nicole advises. “There will be tough days, but if you’re rooted in your passion and purpose, you’ll get through them.”

She also stresses the importance of community: “Don’t try to do it all alone. Build relationships with other business owners. The support I’ve received from other women entrepreneurs in Downtown Salisbury has made all the difference. We inspire each other, collaborate, and lift each other up.”

“Use your resources, ask for help, and believe in your ability to build something great. You don’t have to do it all—but you can do it with the right support around you.”
